Behind root + marrow

We are so glad to join you in the kitchen with root + marrow. Our passion is delicious and nutritious food, our drive is abundance in health, and our inspiration is to share this with as many people as we can.

Families gathering in the kitchen, putting down roots at the dinner table, and creating a connection with food is our inspiration behind this cookbook. It is our desire to provide full-flavored recipes that are made from whole ingredients that will bring healing from the inside-out.

Each of us started creating nutritious meals for our families that would foster health in our homes. With the belief that food is medicine and the healing that we have personally seen and experienced, we have come together to create this allergy friendly cookbook so that we can share our passion with others.

We hope to make new traditions in the kitchen with you.

I grew up eating a lot of simple meals on repeat. My mom’s “go-to” meals were pork chops with apple sauce, pasta and red sauce, veggies, and the good ole’ rice machine. She tells me now that she enjoyed cooking, but never really learned how to do it well or efficiently. This stuck with me. Growing up, art has always been a huge part of my life in different capacities and over the years, I began to experiment with cooking and fell in love with the beauty of food and the nutrients it provides for your body. Cooking has now become a form of art to me. I was a pescatarian for nine years, which inspired me to get creative with meals and play around with seafood and vegetarian dishes. I now enjoy creating and cooking all different kinds of food and try to keep things fresh, versatile, and fun in the kitchen! I am a mama of a sweet baby girl, a former teacher, and currently practice as a Nutritional Therapy Practitioner (NTP). I own and run Fully Rooted Nutrition, where I get the joy of empowering individuals in their relationship with food to create sustainability and make food nourishing and fun again! The hustle is real in our household, so I try to make meal planning, prepping, and cooking easy for myself and my clients. As a former teacher and mother, I have a passion for educating children and hope to work with families in changing the culture of food in their homes so that not only my clients are making these changes for their health, but their kids are as well. I want to be a resource for the people like my mom, who love cooking, but need some guidance and encouragement, but also for the people who want to provide quality food for themselves and their families. I value the importance of a nutrient-dense, whole food diet. I hope that you can have fun in the kitchen and that this book lays down the roots, revitalizes and fuels your wellness journey!

For most of us the way we eat has largely been influenced by the way our moms cooked in the kitchen. My mom grew up in South Korea so you would think she would have taught me how to create authentic Korean dishes. But when she was 10 ½ she was adopted by a ministry family from the Midwest with no significant means. They essentially lived off of bologna sandwiches and goulash. Because of this casseroles, Hamburger Helper, and canned vegetables became staples in our house growing up. The only food I liked to eat was either Chinese take-out, Taco Bell or pizza. But in my early 20’s I spent four years in Mexico and developed a love for full-flavored foods cooked with fresh ingredients and an array of spices. Most of this was spurred on by spending time learning from a vegetarian chef. A few years later I went through a training with the Center for Mind Body Medicine at a local hospital. In it they taught us how to approach our treatment of patients through more holistic methods like food and exercise. One of the hallmarks of this training was when they brought in a chef for a week to prepare various dishes for us. For the first time I could remember, my taste buds came alive while eating vegetables from these gourmet arrangements.

Growing up, my mom did her very best to provide nutritious meals for our family but we had a lot to learn. Our meals mostly consisted of cereal, pasta, sandwiches, and Hamburger Helper which was full of grains and sugar. As a young child I often struggled with anxiety, low energy, brain fog, migraines, asthma, hormonal issues, and allergies that all went undiagnosed. When I was in college I gained a significant amount of weight and my food allergies worsened. This was when I discovered the importance of nutrition and I have since learned to use food as a cornerstone for healing. Over the years my body has healed significantly. My anxiety, migraines, and asthma are gone and I have more energy than before. I am very passionate about nutrition and while my credentials are solely my experience I hope that my story can be an encouragement that anybody can do this! These recipes are a compilation of what I have learned and implemented in my pursuit of a vibrant life. I have written these recipes because I believe that nutritious food can also be delicious and full of flavor. It is my absolute joy to share them with you so that you may also experience the power of nutrition in your own journey towards abundance in health.
